When inspiration comes from our roots, something truly special is born. We invite you on a unique culinary journey through the flavors of the Tarnovo region, inspired by old cookbooks from the 19th and 20th centuries.
Two guest chefs will create five dishes with a local character, each paired with a specially selected wine from our cellar and the Maryan Winery.

We owe the inspiration to Marin Lesev – a researcher of Bulgarian cuisine and collector of culinary relics.

Riesling 2023 – a fresh and elegant white wine with notes of honey, melon and honeycomb
Belmuch Cheese Halva with Boletus, Tomato and Purslane
Chardonnay Family Reserve 2022 – a complex barrel-aged white wine with nuances of vanilla and hazelnut
Old-recipe cabbage sausage, crispy bread with fenugreek and nettle sauce
Kara Pamid 2024 – a light and fruity red wine with soft earthy notes
Slow-cooked beef with bulgur, watercress, sorrel and spicy sauce
Syrah 2022 – a full-bodied and spicy barrel-aged red wine, with black pepper and mulberry
Butter cake with cheese and cherries in marinade
