Our white wine Chardonnay Acacia’s Kiss from the 2024 harvest is the second harvest of Chardonnay from a vineyard near the village of Momkovo, 12 km from Svilengrad. The plot is extremely interesting. The vines are 26 years old, planted on white humus with high alkalinity. This has a strong impact on the wine, creating an impressive combination of salinity, southern fruitiness and warmth. The wine carries the specificity of the plot.

We used French pink acacia for aging. The wine is not aged in a barrel, but in a stainless steel vessel, into which we inserted one-meter arcs of acacia for 5 months. Every week we made batonages to lift the lees, thereby enriching the aromas. The contact with the wood emphasizes the aromatic profile of the Chardonnay variety by enhancing the feeling of minerality. The wine was aged for five months on the fine lees.
