GRAPE VARIETY: 100% Chardonnay
VINEYARD: Chardonnay is traditionally grown in the hilly Bulgarian Danube Plain, where at 200-300 m above sea level summer temperature amplitudes are significant between cool mornings and hot afternoons. This Chardonnay is from a 22-year-old vineyard near the village of Tsarev Brod, Shumen District, Northern Bulgaria. Flat terrain, altitude 250 m, chernozem calcareous soils.
WINEMAKING: Harvest date: 07/09/2022. Manual picking and sorting. Draining without skin contact. Fermentation with constant temperature control. Aged on the lees for 5 months in contact with 1-meter-long acacia battens, with batonage once a week. Bottling date: 25.03.2023.
TECHNICAL FACTS: Alcohol content 12.5%, total acidity 7.2 g/l, residual sugars 3 g/l
COLOUR: Fine sparkling, yellow-greenish.
NOSE: Intense floral-citrus nose, white flowers.
PALATE: Strong mineral taste with salty notes that come from aging with French pink acacia. Citrus and white flowers. Medium body with distinct citrus notes. Long and very fresh finish. Food pairing: Rich salads, cheeses, seafood and fish dishes, grilled white meats.
