Kara Pamid – light red wine from an old Bulgarian variety
Kara Pamid is an old Bulgarian variety Pamid. Its name itself (“kara” – black) suggests that this is the darkest clone of the variety, with darker colored skins, which give wine with a more saturated color.
Kara Pamid from the 2025 harvest comes from vineyards near the village of Korten, Sliven district, Thracian Lowland region. Around the village of Korten is one of the traditional wine-growing regions of the country with favorable conditions for growing wine grapes. The vineyard is over 50 years old, the altitude is about 200 meters. The soils are diluvial sandy. The vineyard is located on the southern slopes of Sredna Gora. The terrain is gently sloping and open to the south, and from the north it is protected from the cold winds by the mountain. The climate is continental. There is little precipitation, mainly in spring, and the winters are mild, often with strong winds.
2025 was dry and very hot, but in August the vineyard received rainfall. Pamid is a variety that ripens slowly. The hot year and the August rain contributed to the excellent ripening of the grapes, and the drought did not adversely affect it.
After crushing, we carried out fermentation in two small open vessels with hand stirring. Since the variety has a smaller reserve of tannins, we added back about 20% of the bunches that remained in the grape must until the end of fermentation. After fermentation was complete, we passed the finished wine through the warm lees of Cabernet Sauvignon. This added a little more color and structure to the finished wine.
This is an ideal summer red wine. Its color is transparent red with very light violet hues. The taste is fresh, with a subtle nuance in the taste of sour cherry and very light tartness. The wine has only undergone rough filtration and there are often crystals of wine salts in the bottles.
It goes well with pasta, salads and cheeses. It is perfect for all kinds of banitsa. For the most pleasant feeling, cool slightly to about 14-16 degrees and drink on a summer afternoon or evening by the sea, in the yard, with friends and fun.
