Since the very beginning of our winery, the tradition of inviting friends to help make our Pelin has begun. Thus, our Pelin Day was born - a celebration of wine traditions and friendship.

Pelin (wormwood) is a traditional Bulgarian drink made from white wine, herbs and fresh fruits. It is called after the herb "wormwood" which gives the typical bitterness in its taste. It is also called layered pelin because of the way the herbs and fruits were arranged in vats. Good pelin requires excellent wine and a certain combination of herbs and fruits.
